The Mint Restaurant, located in Raleigh, North Carolina is an establishment for fine dining and entertainment in Raleigh's downtown newly renovated Fayetteville Street area. The Fayetteville Street area in Raleigh is a district for adult-themed dining and entertainment, catering to sophisticated and professional adults.

Created by the Raleigh Restaurant Group, The Mint opened in January 2008. The Mint features Jeremy Clayman as its executive chef and is managed by Ryan Reavis. The restaurant seats 85 in the main dining room, and also incorporates 64 gas-heated outside seats for dining in all but the coldest temperatures. The glamorous MBar, located on the Mezzanine level, features classic cocktails-including The Sazerac, a great place to socialize, and a jewel like bar top. The Mbar's upstairs capacity is 50 seated plus room for standing.

Jeremy Clayman, the executive chef of The Mint Restaurant, started his culinary career in Charlotte at age 15. He has worked at the Peninsula Grille, Charleston Chops, and also the Hermitage Hotel. Now at the Mint Restaurant, Jeremy says there won't be a signature dish, but rather a menu that evolves on a daily basis. The Mint's Chef Jeremy would like to reconstruct how people view food here in Raleigh.

Some of the cooking and all of the baking will be done by Eric Foster. Foster is from Chicago, and has worked with Chef Jeremy in the past. Like Jeremy, Eric likes to make simple things look different. Foster describes his work as artsy, fun, elegant, and approachable.

The combined culinary talents of Clayman and Foster will provide a menu that is descriptive in flavor, focusing on the ingredients and emphasizing aesthetics and texture differences. Neither Chef Jeremy nor Eric Foster has ever had such a significant opportunity for freedom and creativity, and in their words - they are so excited to be creating such fine food for The Mint Restaurant.
