Jeremy Clayman, the executive chef of The Mint Restaurant, started his culinary career in Charlotte at age 15. He has worked at the Peninsula Grille, Charleston Chops, and also the Hermitage Hotel. Now at the Mint Restaurant, Jeremy says there won't be a signature dish, but rather a menu that evolves on a daily basis. The Mint's Chef Jeremy would like to reconstruct how people view food here in Raleigh.
Some of the cooking and all of the baking will be done by Eric Foster. Foster is from Chicago, and has worked with Chef Jeremy in the past. Like Jeremy, Eric likes to make simple things look different. Foster describes his work as artsy, fun, elegant, and approachable.
The combined culinary talents of Clayman and Foster will provide a menu that is descriptive in flavor, focusing on the ingredients and emphasizing aesthetics and texture differences. Neither Chef Jeremy nor Eric Foster has ever had such a significant opportunity for freedom and creativity, and in their words - they are so excited to be creating such fine food for The Mint Restaurant.
